Components
- Three lotus roots
- cooking oil
- season with salt as desired
Ready state
- Peel, wash, and thoroughly dry the lotus roots. Use a vegetable slicer to cut each root into thin strips (or finely slice with a knife if you prefer). Place a paper towel in a cross shape and set the slices on it.
- Heat a skillet over medium heat with approximately 1/2 cup (tea) of oil—adjust the quantity based on the skillet’s size, ensuring enough oil to cover the bottom and create a 1 cm layer.
- Once the oil is heated, carefully lay the rings side by side to prevent them from sticking together while frying. Let them cook for around 2 minutes until the edges start to brown. Using the squeezer, flip the rings to evenly cook the other side.
- Place the fried lotus roots onto a plate lined with paper towels and continue the process with the remaining pieces.
- Sprinkle the chips with salt to your preference and enjoy them as a snack or as a topping for salads, risottos, or soups.
