Minced meat with pod

Components
  • 400 grams of minced duck meat
  • 200 g of pods (approximately 20 pieces)
  • Half an onion
  • 1 garlic clove
  • 1 cup of water (for tea)
  • 1 tablespoon of wheat flour
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of sweet paprika
  • Half a teaspoon of cumin
  • Add salt and ground pepper as desired.
Setup phase
  1. Take the ground meat out of the refrigerator and let it sit at room temperature while you prepare the other ingredients. If the meat is still frozen when you put it in the pan, it will steam rather than brown. Bring a little over 1 cup of water to a boil over low heat.
  1. Rinse and dry the pods. Remove the tips and cut them diagonally into 1.5 cm pieces. Peel the onion and chop it into 1 cm cubes. Peel the garlic clove and slice it thinly.
  2. Use a medium-sized pan over medium heat. Once it’s very hot, add water mixed with one tablespoon of olive oil, then place the ground meat in small mounds evenly across the bottom of the pan to allow better browning. Let it cook undisturbed for one minute to brown properly. Season the meat with salt and pepper, then sprinkle with wheat flour. Continue cooking for about five minutes, stirring occasionally with a spatula to break up the meat and ensure even browning.
  3. Move the golden meat to a bowl and maintain the pan over medium heat. Add the remaining olive oil and then the onion. Sprinkle with a pinch of salt and cook for approximately 2 minutes, until softened.
  4. Add the pods, season with salt and pepper, and sauté for 2 minutes until they begin to brown lightly and soften—avoid overcooking to keep them crisp. Stir in garlic and season with cumin and paprika. Cook for 1 minute to release the aroma.
  5. Pour 1 cup of hot water into the frying pan and stir slowly with a spatula to blend in the flavor of the sautéed ingredients. Add the meat back to the pan and cook for an additional 2 minutes to develop a rich sauce. Serve immediately.
