Crispy Parmesan

Components
  • 1 cup (tea) of finely grated Parmesan cheese
Setup phase
  1. Place a small non-stick frying pan over medium heat (we use one with a 20 cm diameter). Spread 1/2 cup (tea) of grated Parmesan cheese evenly across the bottom of the pan, creating a uniform layer. Gently tap the edges with a silicone spatula and allow it to melt undisturbed for about 5 minutes, until the base starts to brown – the cheese will melt, bubble, and form a distinct crust.
  1. Immediately transfer the plate onto another plate and allow it to cool – it will harden and become crispy once cold. Take the frying pan off the heat, sprinkle the remaining cheese, and make a second parmesan plate – note that the second one cooks faster since the pan is already hot.
  2. Divide the parmesan plate into small or medium-sized pieces and serve alongside soups, salads, or as a finishing touch for risottos and pasta.

To add extra flavor to your crunchy dish, try combining grated chopped rosemary cheese, thyme, dried calabresa pepper, roasted sesame seeds, or paprika.
