Radish sunomono

Components
  • One bundle of radishes (approximately 10 pieces)
  • 1/4 cup of rice vinegar
  • 1/4 cup of granulated sugar
  • 1½ tablespoons of salt
  • Black sesame roasted to desired flavor
Mode of preparation
  1. Using a vegetable brush, thoroughly clean the radish skin under running water. Pat dry and slice the radishes into thin strips using a mandoline. Toss with salt and let drain over a bowl in a sieve for 15 minutes.
  1. In a bowl, combine sugar and vinegar, stirring until the sugar dissolves. Use a spoon to carefully press the radishes to remove extra moisture. Place the radish rings into a glass jar and cover with the vinegar mixture. Seal the jar and refrigerate for a minimum of one hour to marinate.
  2. Serve garnished with toasted black sesame seeds to taste. Sunomono can be enjoyed as an appetizer, side dish, or even as a substitute for pickles in a sandwich.
