For the tangled mess of wires
Components
- 250 g of fresh palmite spaghetti
- 1 cup (tea) of sweet grape tomatoes (approximately 180 g)
- Three tablespoons of olive oil
- Two sprigs of basil
- 1/4 cup of toasted and chopped nuts
- Add salt and ground pepper gradually, adjusting to your preference.
Setup phase
- Rinse, dry, and slice the tomatoes in half.
- Place a regular pan filled with water over high heat. Once it reaches a boil, stir in 2 teaspoons of salt, add the heart of palm spaghetti, and cook for just 30 seconds. Reserve 1 cup of the cooking water and then drain the heart of palm using a sieve.
- Place the pan back on medium heat (no water or washing needed). Once heated, add the olive oil, then the tomatoes, season with a pinch of salt and pepper, and cook for about 2 minutes, stirring occasionally, until the tomatoes soften without becoming watery.
- Stir in 1⁄4 cup (tea) of the reserved cooking water, add basil and half of the nuts, then remove from heat. Let the sauce rest in the pan while you prepare the paillard.
For the fatherllard
Components
- Two filet mignon steaks (approximately 100 g)
- Add salt and ground pepper gradually, adjusting to taste.
- oil according to preference
Setup phase
- Cut a food bag in half. Place a steak on one half and cover it with the other half of the bag. Using a meat mallet, pound the steak from the center outward until it becomes quite thin (alternatively, use the palm of your hand or the bottom of a heavy pan). Be cautious not to hit too hard, as the meat might tear. Repeat the process with the other steak.
- Heat a large skillet over medium heat. Season just one side of the paillards with salt and pepper to your liking. Once the pan is very hot, add half a teaspoon of olive oil and swirl it to coat the entire bottom. Place a paillard in the pan and cook for about 2 minutes. Flip it using tongs and cook for an additional minute. Remove to a plate and repeat the process with the other paillard.
- Serve alongside the pub spaghetti and tomato sauce with nuts and basil.
