Components
- 400 grams of okra (approximately 40 pieces)
- 1 teaspoon of grated ginger (approximately a 2 cm piece)
- 1 clove of garlic, grated
- 2 teaspoons of fuba
- Half a teaspoon of wheat flour
- Half a teaspoon of ground cumin
- 1 teaspoon of coriander seed powder
- A quarter teaspoon of cayenne pepper
- 2 tablespoons of extra virgin olive oil
- season with salt as desired
Setup phase
- Set the oven to 200 °C (moderate heat) and allow it to warm up.
- Put the okra in a bowl, fill it with water, and rinse thoroughly. Pat the okra dry with a dish towel—the drier they are, the crunchier they will remain after baking. Slice each okra lengthwise in half.
- In a big bowl, combine the olive oil with ginger, garlic, cumin, coriander, cayenne pepper, and a pinch of salt. Incorporate the okra and stir thoroughly to coat it evenly with the spices. Then, add the wheat flour and fuba, mixing once more.
- Place the okra on a large, preferably non-stick baking sheet, spacing the halves apart—it’s okay if they slightly overlap since the okra will shrink during baking. Bake for approximately 30 minutes until browned, stirring halfway through to ensure even roasting. Serve immediately.
Freidora de aire
Clean and season the okra according to the recipe. Preheat the Electrolux Air Fryer by Rita Lobo to 180 °C and set it to bake for 25 minutes, turning the okra twice during cooking to ensure even roasting.
